Maple-Chile Chicken Wings

This game-day favorite benefits from a bit of marinating time before roasting. While frying is the classic method, it’s messy and unnecessary, so opt for the oven instead.

Ingredients

  • 1/2 cup dark maple syrup
  • 4 Tbsp. unsalted butter, melted
  • 1 to 2 tablespoons chipotle chili powder
  • 2 tsp. garlic powder
  • 1 Tbsp. apple cider vinegar
  • Kosher salt and freshly ground black pepper
  • 2 lb. chicken wings
  • Cooking spray
  • Chopped fresh chives, for garnish

Directions

    1. Step 1Combine maple syrup, butter, chili powder, garlic powder, and vinegar in a bowl. Season with salt and pepper. Toss together wings and half of marinade in a bowl. Refrigerate 1 hour.
    2. Step 2Preheat oven to 425°F with racks in the middle and upper positions. Line a rimmed baking sheet with foil and lightly grease. Spread wings in a single layer on prepared baking sheet. Bake on the middle rack until cooked through, 30 to 35 minutes.
    3. Step 3Switch oven to broil. Glaze wings with remaining marinade and broil, on the top rack, until starting to brown, 1 to 2 minutes. Serve garnished with chives.
