Ingredients
- Canola oil
- 2 Tbsp. olive oil
- 2 garlic cloves, chopped
- 2 cups fresh blueberries
- 3 Tbsp. apple cider vinegar
- 2 Tbsp. molasses
- 1 Tbsp. Worcestershire sauce
- 1 tsp. chili powder
- 1 tsp. onion powder
- 1 tsp. smoked paprika
- Kosher salt and freshly ground black pepper
- 2 tsp. cornstarch
- 4 lb. split chicken wings (about 32)
Directions
- Step 1Set up grill for indirect cooking and heat to medium-high. Once hot, clean grill grates and oil grates with canola oil.
- Step 2Heat olive oil in a small pot over medium heat. Add garlic and cook, stirring occasionally, until fragrant, 1 to 2 minutes. Add blueberries, vinegar, molasses, Worcestershire sauce, chili powder, onion powder, and paprika. Season with salt. Increase heat to medium-high and cook, stirring often, until blueberries have burst, 4 to 6 minutes.
- Step 3Whisk together cornstarch and 2 teaspoons water in a bowl until smooth. Add cornstarch mixture to sauce and cook, stirring often, until almost thick enough to coat the back of a spoon, 1 to 2 minutes; cool 5 minutes. Transfer to a blender and blend until smooth, about 1 minute. Pour half of sauce into a bowl. Reserve remaining sauce.
- Step 4Place wings on the cool side of the grill. Cover and cook, turning once, until wings are cooked through, 20 to 25 minutes. Use tongs to transfer wings to bowl with sauce and toss to coat. Return wings to the hot side of the grill and cook, turning once, until glaze is matte and caramelized, 3 to 4 minutes. Brush wings with some of remaining sauce. Serve immediately with remaining sauce alongside.
