Wrapped in buttery pastry and baked until golden, they're packed with melty cheese and juicy tomatoes for a savory bite that's just as welcome at a picnic as it is alongside a simple green salad. Ingredients
- 1 (12-ounce) container cherry tomatoes
- 1 Tbsp. olive oil
- Kosher salt and freshly ground black pepper
- 3 slices cooked bacon, crumbled
- 2 small cloves garlic, pressed
- 1 Tbsp. chopped fresh oregano
- 4 oz. sharp Cheddar, grated (about 1 cup)
- 1/4 cup sour cream
- 1 (17.3-ounce) package frozen puff pastry sheets, thawed
- All-purpose flour, for work surface
- 1 large egg, beaten
Directions
- Step 1Preheat oven to 325°F. Combine tomatoes and oil in a 2-quart baking dish. Season with salt and pepper. Bake until tomatoes are blistered and start to release their juices, 55 minutes to 1 hour. Cool completely.
- Step 2Stir together tomatoes, bacon, garlic, oregano, Cheddar, and sour cream in a bowl, pressing tomatoes against sides of bowl to burst them. Season with salt and pepper.
- Step 3Increase oven to 400°F. Line a rimmed baking sheet with parchment paper. Unroll puff pastry on lightly floured work surface; cut each in half. Place filling on bottom center of each rectangle, dividing evenly, leaving 1-inch border all around. Brush border with egg and fold dough over filling. Press edges with fork to seal. Transfer to prepared baking sheet. Lightly prick tops with a fork. Brush tops and sides with egg. Bake until golden, 18 to 20 minutes. Cool 5 minutes.
