If you're looking for a slightly healthier version of everyone's favorite football-night staple, the air-fryer is your best friend. It will help give your wings get a nice, crispy exterior without all the oil that comes from deep-frying. And you can practically cook them faster than it takes most delivery services to ring your doorbell.

But the trick to getting extra crispy wings lies in a little bit of pre-game (if you will) prep: To make sure your wings don't sog out, dry them thoroughly by patting with a paper towel, and then toss them in a mix of salt, pepper, and a little baking powder. This will help the skin crisp up without overcooking the meat.

After that, you can dress them in a classic Buffalo sauce, or eat them simply, with salt and pepper. But we like to mix up a simple, spicy sauce from ketchup, Worcestershire, maple syrup, and sriracha. If you've got kids with sensitive taste buds or you're not a fan of spice, just leave the sriracha out. You've still got a sauce packed with flavor. What's easier than that?

Ingredients

  • 1/2 lb. chicken wings (8 - 12 wings)
  • 1/2 tsp. baking powder
  • Kosher salt and freshly ground black pepper
  • 1/3 cup ketchup
  • 1/2 lime, zest and juice
  • 1/4 tsp. Worcestershire sauce
  • 1 Tbsp. pure maple syrup
  • 1 Tbsp. sriracha sauce (optional)

Directions

    1. Step 1Preheat air fryer to 375°F for 1 to 2 minutes. Pat chicken wings dry with paper towels. Toss together wings, baking powder, salt, and pepper in a bowl.
    2. Step 2Add wings to air fryer and cook, shaking pan halfway through, until the internal temperature on the largest wing reads 165ºF, 13 to 16 minutes.
    3. Step 3Combine ketchup, lime zest and juice, Worcestershire sauce, maple syrup, and Sriracha (if desired) in a bowl. Add wings and toss to coat. Serve immediately.
