Swedish Meatballs with Chicken

Cooking with ground chicken removes almost 9 grams of saturated fat per serving from the meal, while the savory sauce (and heavy cream) still keep it plenty flavorful. It's an easy way to make this comfort food dish just a little healthier, without making it flavorless.

Ingredients

  • 1 lb. ground chicken
  • 1/3 cup chopped onion
  • 1 large egg, beaten
  • 1/4 cup plain breadcrumbs
  • 1 1/2 tsp. chopped garlic
  • 1/4 tsp. ground allspice
  • 1/4 tsp. fresh nutmeg
  • Kosher salt and freshly ground black pepper
  • 2 Tbsp. canola oil
  • 2 Tbsp. all-purpose flour
  • 1 1/2 cups beef broth
  • 2 Tbsp. heavy cream
  • Chopped flat-leaf parsley, for garnish
  • Mashed potatoes and lingonberry jam, for serving

Directions

    1. Step 1Combine chicken, onion, egg, breadcrumbs, garlic, allspice, and nutmeg in a bowl. Season with salt and pepper. Form mixture into 10 meatballs.
    2. Step 2Heat oil in a large nonstick skillet over medium heat. Add meatballs and cook, turning occasionally, until golden brown on all sides and cooked through, 12 to 14 minutes. Remove to a plate. Add flour to pan and cook, stirring 30 seconds. Slowly add broth and cream and cook, stirring occasionally, until thickened, 2 to 3 minutes. Add meatball and any juices and cook, turning, until coated, about 1 minute. Garnish with parsley and serve over mashed potatoes with lingonberry jam alongside.
