Peanut-Salted Caramel Slab Pie

If your sweet tooth is actually a little salty, this may be the perfect pie.

Is there a better combination of flavors than salty and sweet? We didn't think so either. This simple slab pie will give fans of the flavor pairing everything their hearts could want: salted caramel packed with snacky cocktail peanuts for a dessert that's just about as rich as you could hope for.

Ingredients

  • All-purpose flour, for work surface
  • 1 recipe Basic Pie Dough, not separated and flattened into a rectangle
  • 3 large eggs
  • 1 cup packed light brown sugar
  • 1 cup jarred salted caramel sauce
  • 2 tsp. pure vanilla extract
  • 1/4 tsp. kosher salt
  • 6 Tbsp. (3/4 stick) unsalted butter, melted
  • 1 lb. salted cocktail peanuts
  • Flaky sea salt and salted caramel ice cream, for serving

Directions

    1. Step 1Preheat oven to 350°F with rack in the bottom position. On a lightly floured surface, roll dough to an 18- by 13-inch rectangle. Fit in a 15- by 10-inch jelly-roll pan. Trim overhang to 1 inch, fold under, and crimp. Chill. 
    2. Step 2Whisk together eggs, sugar, caramel sauce, vanilla, and salt in a bowl. Whisk in butter until combined. Stir in peanuts. Pour into crust. Bake until filling is set but still jiggles slightly in the center, 35 to 40 minutes. (Shield just the filling with foil after 25 minutes to prevent overbrowning, if necessary.) Transfer to a wire rack; cool completely. Sprinkle with sea salt and serve with ice cream.
