Greek Tomato and Feta Salad

If you've ever enjoyed a Mediterranean dinner, chances are good you've been served some version of this high-summer staple.
Fresh, almost overripe tomatoes, paired with cucumbers, salty Feta, and red onions so raw and strong they practically make your eyes water. Add olives and a tart vinaigrette and you have a blend of attention-getting flavors that combine just perfectly on a fork. We especially love this recipe with Greek Chicken and plenty of Tzatziki Sauce, where it becomes a feast!

Ingredients
- 1/2 cup olive oil
- 2 Tbsp. red wine vinegar
- 2 tsp. dried Greek oregano
- Kosher salt and freshly ground black pepper
- 4 medium tomatoes, cut into wedges
- 1 small red onion, halved and thinly sliced
- 2 English cucumbers, peeled, halved lengthwise, and cut into 1/2-inch-thick slices
- 1 cup pitted kalamata olives
- 1 (8-ounce) block Feta, cut into large cubes
Directions
- Step 1Whisk together oil, vinegar, and oregano in a bowl. Season with salt and pepper.
- Step 2Combine tomatoes, onion, cucumbers, olives, and Feta in a bowl. Drizzle with desired amount of dressing and toss gently to coat. Serve immediately with remaining dressing alongside.
