Lava cakes are a decadent treat. Slice into the sweet cake with a spoon, and a delicious, gooey-warm center of chocolate bursts out like ... well, like lava!
Though it takes a little bit of timing—you want to serve them right away, while they're still hot—they make a great, classic Valentine's dessert!

Ingredients
- Cooking spray
- Cocoa powder, for dusting
- 6 oz. semi-sweet chocolate, chopped
- 4 Tbsp. (1/2 stick) unsalted butter
- 1/3 cup all-purpose flour, spooned and leveled
- 1/2 cup confectioners’ sugar
- 1 tsp. espresso powder
- 1/4 tsp. kosher salt
- 2 large eggs, plus 2 large egg yolks
- Vanilla ice cream or confectioners’ sugar, for serving
Directions
- Step 1Preheat oven to 425°F. Spray four 6-ounce ramekins with cooking spray and dust with cocoa powder.
- Step 2Place chocolate and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until melted and smooth. Whisk together flour, confectioners’ sugar, espresso powder, and salt in a bowl. In a second bowl, whisk together eggs and egg yolks. Add chocolate-mixture and eggs to the dry ingredients; stir until combined.
- Step 3Spoon batter into prepared ramekins, dividing evenly. Place ramekins on a baking sheet. Bake until the sides are set but the center is still soft, 14 to 15 minutes. Remove from oven and cool for one minute. Carefully invert cakes onto plates (the ramekins will be hot). Serve immediately topped with ice cream or powdered sugar.
Note: To save time you can mix the batter up to a day ahead of time and store it in the fridge. Bring to room temperature before spooning into ramekins and baking.
