Fresh, homemade yogurt is a revelation. It's so easy to make—and tastes so good—you'll wonder why you haven't been making it yourself this whole time.

All you need is a milk, some time, and a little leftover yogurt. We'll show you how to do it.

Ingredients

  • 12 cups whole milk
  • 3 Tbsp. plain unsweetened whole-milk yogurt, at room temperature
  • Sugar or pure honey, to taste
  • Fresh berries and granola, for serving

Directions

    1. Step 1Place milk in a large pot with a deep-fry thermometer attached. Cook over medium-high heat until just starting to foam (do not let boil). Reduce heat and simmer, stirring occasionally, until a thick foam forms on the top and mixture reaches 180°F to 200°F, about 30 minutes. Cool until mixture reaches 110°F to 120°F, 1 hour.
    2. Step 2Stir together 1 cup cooked milk and yogurt in a bowl. Return to pot and stir to combine. Cover pot with lid and wrap in warm kitchen towel. Let sit in a sunny, warm spot, without stirring, until thick and tart, 6 to 10 hours. Stir in sugar or honey to desired sweetness.
    3. Step 3Serve topped with berries and granola. Refrigerate any unused yogurt up to 2 weeks.
