Tuna Caesar Salad

This fast and easy salad makes the perfect lunch or light dinner!

Here's a simple, tasty lunch or a light dinner that takes minutes to make, won't break the bank, and won't weigh you down, either. And if you have a can of tuna in the cupboard, you're halfway to making it!

Our advice: Skip the boxed croutons for this. Splurge the small amount on a good loaf of bread and take the extra 15 minutes to make your own warm croutons. It makes this salad immeasurably better.

Ingredients

  • 8 oz. sourdough bread, torn into bite-size pieces
  • 1/4 cup olive oil
  • 1/4 tsp. cayenne pepper
  • Kosher salt and freshly ground black pepper
  • 1 garlic clove, grated
  • 2 anchovy fillets
  • 1/2 cup mayonnaise
  • 2 Tbsp. fresh lemon juice
  • 1 tsp. Worcestershire sauce
  • 1 tsp. Dijon mustard
  • 1 oz. Parmesan, finely grated (about 1/4 cup)
  • 1 head romaine lettuce, torn into bite-size pieces
  • 1 (5-ounce) cans tuna in olive oil, drained

Directions

    1. Step 1Preheat oven to 450ºF. Toss together bread, oil, and cayenne pepper on a rimmed baking sheet. Season with salt and black pepper. Bake, tossing once, until golden brown and crunchy, 13 to 15 minutes. Cool to room temperature. 
    2. Step 2Meanwhile, place garlic and anchovies in a large bowl. Use a fork to mash the garlic and anchovies until a thick paste forms. Add the mayonnaise, lemon juice, Worcestershire, mustard, and Parmesan and stir to combine. Season with salt and pepper. Add the romaine and croutons and toss to combine. Top with tuna.
