Steak Tacos With Blackberry Salsa

Be mindful to not over-marinate the meat or it risks getting mushy. If you can't find queso fresco use a dollop of sour cream or a crumbled feta instead.

Ingredients

For the steak:

  • 1 lb. skirt steak
  • Kosher salt and freshly ground black pepper
  • 3 Tbsp. fresh lime juice
  • 2 Tbsp. Worcestershire sauce
  • 3 cloves garlic, grated
  • 1/2 tsp. ground cumin
  • 2 Tbsp. olive oil

For the salsa:

  • 1 cup blackberries, quartered
  • 1 small avocado, chopped
  • 1 jalapeño, seeded and chopped
  • 1/2 red bell pepper, chopped
  • 1/4 cup chopped fresh cilantro
  • 2 Tbsp. fresh lime juice, plus lime wedges for serving
  • Kosher salt and freshly ground black pepper
  • Canola oil, for grill grates
  • 12 corn tortillas, warmed over medium heat
  • Crumbled queso fresco and sliced radishes, for serving

Directions

    1. Step 1Marinate the steak: Season steak with salt and pepper. Combine lime juice, Worcestershire sauce, garlic, cumin, and olive oil in a bowl or a large zip-top bag. Add steak and turn to coat. Marinate for at least 30 minutes but no more than 1 hour.
    2. Step 2Make the salsa: Combine blackberries, avocado, jalapeño, bell pepper, cilantro, and lime juice in a bowl. Season with salt and pepper.
    3. Step 3Heat grill to high. Once hot, clean and oil grill grates with canola oil. Remove steak from marinade. Grill, turning once, until the internal temperature on an instant-read thermometer reads 125°F for medium-rare, 6 to 8 minutes. Let rest 5 minutes before slicing.
    4. Step 4Serve steak and salsa in tortillas topped with queso fresco and radishes, and lime wedges alongside.
