Ingredients
- 4 cups old-fashioned rolled oats
- 1 1/2 cups chopped pecans
- 1/4 cup whole flaxseeds
- 2/3 cup dark maple syrup
- 1/4 cup melted coconut oil
- 1 tsp. pure vanilla extract
- 1/4 tsp. ground cinnamon
- 1/4 tsp. kosher salt
- 1/2 cup sweetened coconut
- 1 cup dried cranberries
- 1 cup semisweet chocolate chips
Directions
- Step 1Preheat oven to 325°F. Line a large rimmed baking sheet with parchment paper. Stir together oats, pecans, flaxseeds, maple syrup, coconut oil, vanilla, cinnamon, and salt in a bowl.
- Step 2Spread oat mixture on prepared baking sheet and bake 15 minutes. Remove from oven and stir in coconut. Bake until fragrant and golden brown, 14 to 16 minutes. Cool completely. Stir in cranberries and chocolate chips.
