Pimento Cheese Club Sandwiches
Homemade pimento cheese takes any club sandwich from ho-hum to amazing.

This recipe for pimento cheese makes about twice as much as needed for eight sandwiches. Trust us, you won’t be sad to have extra on hand. The leftovers will make the best snack—plus, it will last for a few weeks in the fridge, and just get better and better as it sits.

Ingredients
- 1/3 cup mayonnaise
- 1 (4-ounce) jar diced pimentos, drained
- 1 large scallion, chopped
- 2 tsp. Dijon mustard
- Dash of Worcestershire sauce
- Dash of hot sauce
- 1 lb. cheese (such as sharp Cheddar, Monterey Jack, Gouda, or Havarti), grated (about 4 cups)
- Kosher salt and freshly ground black pepper
- 16 slices good-quality sourdough bread
- 1 lb. smoked deli turkey
- 16 slices cooked bacon
- Lettuce leaves, torn
Directions
- Step 1Beat mayonnaise, pimentos, scallion, mustard, Worcestershire sauce, and hot sauce with an electric mixture on low speed until combined, about 1 minute. With mixer running, slowly add cheese in 3 additions. Mix until evenly combined and some of the cheese has broken down, 1 to 2 minutes. Season with salt and pepper. Cover and chill at least 12 hours.
- Step 2Lay 8 slices of bread on a cutting board. Top with turkey, bacon, lettuce, and desired amount of pimento cheese. Top with remaining bread slices.
