Ingredients
- 1 lb. spaghetti
- Kosher salt and freshly ground black pepper
- 1/4 cup olive oil
- 2 cloves garlic, chopped
- 2 1/2 lb. red heirloom tomatoes, grated on the large holes of a box grater, skins discarded
- 2 sprigs basil, plus more for serving
- Grated Parmesan cheese, for serving
Directions
- Step 1Cook spaghetti in a large pot of salted water until al dente; drain. Set aside.
- Step 2Meanwhile, heat oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute. Increase heat to medium-high and add tomatoes and basil. Season with salt and pepper. Cook, stirring occasionally, just until warmed through, 2 to 3 minutes. Add spaghetti and toss to coat.
