This refreshing summer drink from the new Full Belly Farm & Kitchen cookbook is soon to be your warm-weather favorite. It’s made with fresh or dried lemon verbena leaves—if you don’t have a plant or can’t find the leaves locally, look for them online through sites such as Etsy.

Ingredients
- 2 oz. fresh lemon verbena (about 5 cups)
- 1/2 cup sugar or honey, or to taste
- Lemon verbena sprigs or lemon slices, for garnish
Directions
- Step 1Bring 1 gallon of water to a boil in a large pot. Remove from heat and add lemon verbena. Cover and steep for 15 to 20 minutes (taste as you go and adjust steeping time to your preference).
- Step 2While the tea is still warm, stir in sugar or honey until dissolved. Adjust sweetness to your preference. Strain through a fine-mesh strainer into a pitcher. Cool to room temperature, then refrigerate until chilled.
- Step 3Serve over ice garnished with a sprig of lemon verbena or a slice of lemon.
