A lighter alternative to a pasta or potato salad, this green bean dish calls for lots of fresh summer veggies and makes a great side dish at a barbecue or picnic.

Ingredients

  • 2 1/2 cups extra-virgin olive oil
  • 1 large Egg
  • 4 clove garlic
  • 1 tsp. fresh lemon juice
  • 1/2 tsp. salt
  • 1 tsp. heavy cream
  • 1/2 lb. green beans
  • 16 white button mushrooms
  • 4 sprig mint

Directions

    1. Step 1Make aioli: In a blender, combine 1/2 cup olive oil, egg, garlic, 2 tablespoons water, lemon juice, and salt. With blender running, gradually add remaining oil, blending until mixture emulsifies to a mayonnaise. (Add a few teaspoons water to thin, if needed.)
    2. Step 2In a small bowl, whisk ¼ cup aioli with heavy cream. (Refrigerate remaining aioli to use later, atop grilled fish or chicken.)
    3. Step 3In a medium bowl, toss beans, mushrooms, torn mint, and garlic cream. Divide among 4 plates and garnish with mint.
