This halibut recipe, coated with crispy potato chips, gives a whole new meaning to fish and chips.

Ingredients

  • Cooking spray
  • 1/4 cup sour cream
  • 2 Tbsp. finely chopped fresh flat-leaf parsley, plus more for serving
  • 1 garlic clove, finely chopped
  • 1 Tbsp. lemon zest
  • 6 (6-oz.) halibut fillets
  • Kosher salt and freshly ground black pepper
  • 1 cup finely crushed Utz Potato Chips
  • Lemon wedges, for serving

Directions

    1. Step 1Preheat oven to 425°F. Set a wire rack in a rimmed baking sheet; lightly grease rack. Stir together sour cream, parsley, garlic, and lemon zest in a bowl.
    2. Step 2Season both sides of fish with salt and pepper. Arrange fish on prepared rack. Spread sour cream mixture on top of fish, dividing evenly. Top with chips, dividing evenly, pressing lightly to adhere. Bake until chips are golden brown and fish flakes easily with a fork, 18 to 20 minutes.
    3. Step 3Garnish with parsley and serve with lemon wedges.
