Cucumber and Blueberry Salad

This quick, fresh, and healthy salad is just what your warm-weather cookout needs. With tons of refreshing cucumber, this side dish is bursting with flavor. It gets bright and tangy notes from pickled shallots, savory and nutty flavor from Stilton cheese, and fruity sweetness from fresh blueberries. Add this to your cookout menus this summer!

Ingredients
- 1 medium shallot, thinly sliced into rings
- Kosher salt and freshly ground black pepper
- 2 Tbsp. red wine vinegar
- 2 English cucumbers, shaved lengthwise with a peeler
- 1 cup fresh blueberries
- 1 Tbsp. olive oil, plus more for drizzling
- 3 oz. Stilton or other blue cheese, crumbled
- 2 Tbsp. toasted sunflower seeds
- Flaky sea salt
Directions
- Step 1Combine shallot and 1 teaspoon salt in a bowl. Use your fingers to work salt into shallot, separating rings as you go. Stir in vinegar. Let sit, stirring occasionally, at least 30 minutes and up to 1 hour (store up to 1 week in the refrigerator).
- Step 2Toss together cucumbers and a little salt in a colander. Let sit, stirring occasionally, 15 minutes. Toss together cucumbers, blueberries, and oil in a serving bowl. Top with Stilton, sunflower seeds, and shallot. Drizzle with oil and sprinkle with flaky sea salt. Serve immediately.
