Watermelon, Avocado, and Lime Salad

This recipe was inspired by watermelon farmer Sarah Frey, who started her own produce-delivery business out of an old pickup truck at 15. Two years later she took over her family’s farm and began doing business with some of the country’s largest grocers. Today, Frey Farms grows tens of millions of seedless and seeded watermelons across the United States.

Ingredients

  • 1/4 cup olive oil
  • 2 tsp. lime zest plus 1/4 cup lime juice
  • Kosher salt and freshly ground black pepper
  • 1/2 cup thinly sliced red onion
  • 6 cups chopped watermelon
  • 2 avocados, chopped
  • 1/2 cup chopped fresh cilantro
  • 1/2 to 1 red serrano chili
  • 1/3 cup roasted and salted pepitas

Directions

    1. Step 1Whisk together oil and lime zest and juice in a bowl. Season with salt and pepper. Add onion and let sit 15 minutes. Add watermelon, avocado, cilantro, chili, and pepitas and toss gently to combine. Serve immediately.
