Peach and Tomato Salad

Summer is the only time of year when peaches and tomatoes are both at their absolute best, making this vibrant salad a seasonal must. The sweetness of ripe peaches balances the bright acidity of juicy tomatoes, while fresh herbs and a light vinaigrette tie everything together. Whether you're serving it alongside grilled chicken, steak, or fresh fish, this colorful salad is an effortless way to celebrate summer's best produce.

Ingredients

  • 1 Tbsp. chopped fresh tarragon
  • 1/3 cup olive oil
  • 3 Tbsp. champagne vinegar
  • 2 tsp. pure honey
  • 1 1/2 tsp. Dijon mustard
  • Kosher salt and freshly ground black pepper
  • 3 heirloom tomatoes (about 12 oz. total), cut into wedges
  • 3 peaches (about 1 lb. total), cut into wedges
  • 1/2 cup thinly sliced sweet onion
  • 1 (4-ounce) bag watercress

Directions

    1. Step 1Whisk together tarragon, oil, vinegar, honey, and mustard in a bowl. Season with salt and pepper. Add tomatoes, peaches, and onion and gently toss to combine; let stand 20 minutes.
    2. Step 2Spread watercress on a serving platter and top with tomato mixture. Sprinkle with pistachios.
