Raspberry Linzer Cookie Frozen Yogurt

For anyone who loves the tart, sweet, almond taste of Linzer cookies, this light homemade frozen yogurt will hit the spot.

Ingredients
- 3 cups plain 2-percent reduced fat Greek-style yogurt
- 2 cups half-and-half
- 1 cup sugar, divided
- 1/3 cup light corn syrup
- 1 1/2 tsp. vanilla extract
- 1/4 tsp. kosher salt
- 6 oz. fresh raspberries
- 5.3-ounce package shortbread cookies, crushed
Directions
- Step 1Whisk together yogurt, half-and-half, 2/3 cup sugar, corn syrup, vanilla and salt; let stand 5 minutes. Whisk until sugar dissolves. Chill 2 hours or until very cold.
- Step 2Cook raspberries and 1/3 cup sugar in a saucepan over medium heat 6 to 8 minutes or until fruit is softened; cool completely. Swirl raspberry mixture and crushed shortbread cookies into prepared yogurt.
- Step 3Pour mixture into bowl of an electric ice-cream maker, and process according to manufacturer's instructions. Freeze 1 hour before serving. Store up to 1 week.
