Ingredients
- 1/2 cup olive oil
- 3 Tbsp. white wine vinegar
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. pure maple syrup
- 2 Tbsp. chopped fresh flat-leaf parsley
- 2 Tbsp. chopped fresh dill
- Kosher salt and freshly ground black pepper
- 1 lb. cremini mushrooms, thinly sliced
Directions
1. Whisk together oil, vinegar, lemon juice, maple syrup, parsley, and dill in a bowl. Season with salt and pepper. Add mushrooms and gently toss to combine. Let sit, at room temperature, tossing occasionally until tender, at least 1 hour. Transfer to jars and refrigerate up to 3 days.
