Ingredients
- 2 Tbsp. olive oil
- 1/2 yellow onion, chopped
- 2 cloves garlic, chopped
- 1 cup uncooked long-grain white rice
- 1/2 tsp. ground turmeric
- 2 cups vegetable broth or water
- Kosher salt and freshly ground black pepper
Directions
- Step 1Heat oil in a small saucepan over medium heat. Add onion and cook, stirring occasionally, until tender, 7 to 8 minutes. Add garlic and rice; cook, stirring constantly, 1 minute. Stir in turmeric.
- Step 2Add broth and bring to a boil over medium-high heat. Reduce heat to low, cover, and cook just until water is absorbed and rice is done, 14 to 16 minutes. Fluff with a fork; season with salt and pepper.
