Sausage Pinwheels with Marinated Peppers and Grilled Broccolini

These impressive sausages are a breeze to grill, and easily feed a crowd.

Ingredients

Marinated Peppers

  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. olive oil
  • 1 tsp. pure honey
  • Kosher salt and freshly ground black pepper
  • 12 oz. assorted-colored mini peppers or 1 large bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh flat-leaf parsley, chopped

Broccolini

  • 1 large clove garlic, chopped
  • 1/4 tsp. crushed red pepper
  • 1 1/2 Tbsp. olive oil
  • 1 bunch Broccolini, trimmed and large pieces halved lengthwise
  • Kosher salt and freshly ground black pepper
  • 1 lemon
  • 2 Tbsp. grated Parmesan

Sausage

  • Canola oil, for grill grates
  • 1 large or two small Italian sausage wheels (or 1 1/2 pounds links)

Directions

    1. Step 1Make peppers: Whisk together lime juice, oil, and honey in a bowl until honey is dissolved. Season with salt and pepper. Add mini peppers and onion and let stand, tossing occasionally, until softened, 15 to 20 minutes. Add parsley, and toss. 
    2. Step 2 Make Broccolini: Whisk together garlic, red pepper, and oil. Add Broccolini and toss to coat. Season with salt and pepper. Zest lemon into a bowl; cut in half and reserve. 
    3. Step 3Make sausage: Set up grill for direct and indirect cooking and heat to medium-high. Once hot, clean and lightly oil grates with canola oil. 
    4. Step 4Grill sausages, covered, 5 minutes. Uncover and flip. Add Broccolini to grill, and grill, uncovered and turning often, until charred and just tender and sausages are cooked through, 4 to 6 minutes. Transfer sausages to a platter. Grill lemon, cut sides down, until charred, 1 to 2 minutes. 
    5. Step 5Toss Broccolini with Parmesan, juice from 1 lemon half, and reserved zest. Serve peppers, Broccolini, and remaining lemon half with sausages.
