Ingredients
- 3 Tbsp. olive oil, plus more for baking sheet
- 1 (24-ounce) bag jumbo, raw, natural dry peanuts (not green)
- 2 tsp. smoked paprika
- 1 Tbsp. kosher salt
- 1 tsp. freshly ground black pepper
- 1/2 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1/2 tsp. garlic powder
Directions
- Step 1Preheat oven to 350°F. Lightly grease a large rimmed baking sheet with oil. Rinse and drain peanuts. Whisk together paprika, salt, pepper, coriander, cumin, and garlic powder in a bowl. Add peanuts and oil and toss to coat. Transfer to prepared baking sheet.
- Step 2Bake, stirring once, until fragrant and roasted, 34 to 36 minutes.
