Little Gem Lettuce with Mixed Seed Sprinkle

After making the dressing and the seed mix, this easy-to-assemble salad comes together in just minutes. And the different parts will store well in your fridge!

Ingredients

For Salad

  • 2 little gems or 1 romaine heart, leaves separated
  • 1/4 cup Creamy Salad Dressing
  • 1 Tbsp. Mixed Seed Sprinkle
  • Flaky sea salt (such as Maldon) and freshly ground black pepper

For Creamy Salad Dressing

  • 1/2 cup full-fat plain yogurt
  • 1/4 cup mayonnaise
  • 2 Tbsp. fresh lemon juice
  • 2 scallions, thinly sliced
  • 1 clove garlic, grated, pressed, or finely chopped
  • Kosher salt and freshly black pepper

For Mixed Seed Sprinkle

  • 2 Tbsp. sunflower seeds
  • 2 Tbsp. sesame seeds
  • 2 Tbsp. fennel seeds
  • 1 Tbsp. olive oil
  • Kosher salt

Directions

  • Make Salad Dressing

    1. Step 1Whisk together yogurt, mayonnaise, lemon juice, scallions, and garlic in a bowl. Season with salt and pepper. Transfer to a resealable jar or container and refrigerate up to 1 week.
  • Make Mixed Seed Sprinkle

    1. Step 1Cook sunflower, sesame, and fennel seeds in hot oil in a small skillet over medium heat, stirring often, until fragrant and golden, 1 to 2 minutes. Transfer to a bowl and season with salt. Cool completely before storing. Seeds will keep in an airtight container in refrigerator up to 1 month.
  • Make Salad

    1. Step 1Arrange half of lettuce in a single layer on a large platter. Top with half of dressing and seeds. Season with salt and pepper. Repeat with remaining leaves, dressing, and seeds. Season with salt and pepper.
