Homemade Orange Chicken

Crunchy, sweet and satisfying, Orange Chicken is a classic Chinese American dish. You can find it at practically any takeout restaurant in America. But it's also easy to make at home! It cooks in about the time it would take delivery to arrive. If you haven't made your own orange chicken, this recipe will make it easy. You can save a little money, use the ingredients that you want, and adjust the sweetness and flavor of the sauce to your taste.

What is Orange Chicken sauce made of?

Traditionally, Orange Chicken sauce contains orange zest, orange juice, soy sauce, ginger, vinegar, stock, and corn starch. The corn starch acts as a thickener. Many recipes use sugar and call for other flavorings, such as chile peppers, toasted sesame oil, garlic, or rice vinegar. We tried to keep our version easy and delicious, without too many ingredients.

What's the difference between Orange Chicken and General Tso's Chicken?

The dishes are similar! Both call for breaded and sautéed or fried chicken in a tasty sauce, served over rice.

Orange Chicken sauce uses orange, of course. General Tso's chicken typically has a spicier sauce. It omits any orange, but has soy, ginger, vinegar, stock, corn starch, and other common spices. It also uses hoisin sauce—a jarred condiment made from soybeans and spices.

What kind of chicken is best for Orange Chicken?

Any cubed chicken meat will work in an Orange Chicken recipe. Many sites will call for breast meat, which is a popular and easy choice. But in our testing we found that breast meat, which is leaner and cooks faster, ended up too dry and chewy. Instead we recommend using boneless chicken thighs, which can handle high temperatures better, and stay tender and delicious when stir-fried.

Ingredients

For sauce:

  • zest from one orange, plus 1/2 cup fresh orange juice (about 2 naval oranges)
  • 1 Tbsp. soy sauce
  • 1 Tbsp. packed brown sugar
  • 1 Tbsp. white vinegar
  • 2 Tbsp. chicken stock
  • 1 tsp. freshly grated ginger
  • 1 tsp. cornstarch

For chicken:

  • 3 Tbsp. cornstarch
  • 4 large egg whites
  • 1 lb. boneless chicken thighs, cut into in 1-inch pieces
  • 1 cup all purpose flour
  • 1/2 tsp. baking powder
  • Kosher salt and freshly ground black pepper
  • 3 to 4 cups canola oil, for frying
  • Sliced scallions, for garnish
  • cooked rice, for serving

Directions

    1. Step 1Make the sauce: Cook orange zest and juice, soy sauce, sugar, vinegar, stock, and ginger in a medium saucepan over low heat just until bubbling. Whisk in cornstarch. Cook until sauce thickens,  5 to 6 minutes.
    2. Step 2Make the chicken: Whisk together 2 tablespoons cornstarch and egg whites in a bowl until frothy. Add chicken and let sit, 5 minutes. In a second  bowl, whisk together flour, baking powder, remaining tablespoon cornstarch. Season with salt and pepper. 
    3. Step 3Line a rimmed baking sheet with paper towels. Remove chicken pieces, one at a time (letting excess egg white to drip off), and roll in flour mixture until coated, leave pieces in flour mixture as you work.
    4. Step 4Heat oil in a wok or large Dutch oven over medium heat until temperature reaches 350°F on an instant read thermometer. Cook chicken, in batches, until golden brown and cooked through, 3 to 4 minutes. Transfer to prepared baking sheet to drain. Season with salt and pepper.
    5. Step 5Add chicken to sauce and gently toss to coat. Serve garnished with scallions. and rice alongside.
