Butter Baked Salmon with Cast-Iron Hasselback Potatoes

Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1 tsp. lemon zest, plus 1 tablespoon lemon juice
- 2 cloves garlic, chopped
- Kosher salt and freshly ground black pepper
- 4 (6-ounce) skin-on salmon fillets
- Chopped flat-leaf parsley, for garnish
- Cast-Iron Hasselback Potatoes, for serving, optional
Directions
- Step 1Preheat oven to 425°F. Place butter in an 8-by-8-inch baking dish and melt in oven, 5 to 6 minutes. Stir in lemon zest and juice, and garlic. Season with salt and pepper.
- Step 2Season salmon with salt and pepper and place, skin side down, on top of butter mixture. Bake until salmon is just cooked through, 7 to 9 minutes.
- Step 3Garnish salmon with parsley and serve with Cast-Iron Hassleback Potatoes, if desired, or your favorite side dish.
