Teriyaki Salmon with Crispy Roasted Broccoli

A soy-ginger marinade makes this fish plate-licking tasty.

Ingredients

  • 1/4 cup soy sauce
  • 1/4 cup Mirin (sweet rice cooking wine)
  • 1/2 cup sake
  • 1 Tbsp. pure honey
  • 1 Tbsp. olive oil
  • 4 (6-ounce) skin-on salmon fillets
  • Kosher salt and freshly ground black pepper
  • 1 tsp. chopped garlic
  • 1 tsp. chopped ginger
  • Crispy Roasted Broccoli, for serving, optional

Directions

    1. Step 1Whisked together soy sauce, mirin, sake, and honey in a bowl until honey is dissolved. Pat salmon fillets dry with paper towels. Season with salt and pepper. 
    2. Step 2Heat oil in a large nonstick skillet over medium-high heat. Cook salmon, skin side down, until skin is crispy, 5 to 7 minutes. Flip and cook 1 minute (salmon will not be cooked all the way through). Transfer salmon to a plate and pour off excess oil.
    3. Step 3Add teriyaki mixture, garlic, and ginger to  skillet. Bring to a boil and cook until reduced by a third, 3 to 4 minutes. Return salmon to skillet, skin side up, and cook until just cooked through, 1 to 2 minutes. Serve with Crispy Roasted Broccoli, if desired, or your favorite side dish.
