Pomegranate Molasses

This sweet, tart, easy-to-make syrup is delicious drizzled over ice cream, shaken into salad dressing, stirred into sparkling water, or mixed into cocktails.

Ingredients

  • 4 cups store-bought pomegranate juice
  • 1/4 cup sugar
  • 2 Tbsp. fresh lemon juice

Directions

    1. Step 1Combine pomegranate juice, sugar, and lemon juice in a medium saucepan. Bring to a boil, then reduce to a simmer and cook until liquid coats the back of a spoon and is reduced to 3/4 cup, 50 minutes to 1 hour. Cool to room temperature, then transfer to a small jar. Refrigerate up to 6 months.

Tips: The room temperature molasses should be thick and syrupy, similar to store-bought cane sugar molasses. To test the consistency while it’s cooking, dip a spoon into the mixture. The liquid shouldn’t run off the spoon, and when you drag your finger through it, the created line should remain visible. 

This recipe yields about 3/4 cup, or 12 1/2-ounce servings.
