Roasted Grapes and Delicata Squash Rings

This simple but surprising side dish pairs two iconic foods for a bevy of flavor.

Though the dish couldn't be simpler to make, this pairing of roasted grapes and baked squash transforms into a delicious side dish that's much more than the sum of its parts. Pair it with Red Wine Braised Short Ribs for a sumptuous winter feast. This recipe originally appeared in Anna Stockwell's For the Table: Easy, Adaptable, Crowd-Pleasing Recipes.

Ingredients

  • 2 large or 3 small delicata squash (about 3 pounds total), halved, seeded, and sliced 1/4-inch-thick
  • 1/4 cup olive oil, divided, plus more for serving
  • Kosher salt and freshly ground black pepper
  • 1 lb. seedless grapes on the vine, preferably black
  • 1 1/2 Tbsp. fresh lemon juice, for serving
  • Flaky sea salt, for serving

Directions

    1. Step 1Preheat the oven to 450°F. Toss together squash and 2 tablespoons oil on two rimmed baking sheets, dividing evenly. Season with kosher salt and pepper. Spread squash in a single layer. Roast until bottoms are crisp and golden brown, 15 to 20 minutes. 
    2. Step 2Meanwhile, heat remaining 2 tablespoons oil in a large ovenproof skillet. Use scissors to snip the grapes into small clusters. Add grape clusters to skillet. Season with kosher salt and pepper and toss to combine. Transfer skillet to oven and roast until grapes begin to burst and shrivel, 10 to 12 minutes. 
    3. Step 3Transfer squash and grapes to a serving platter. Drizzle with oil and lemon juice. Sprinkle with flaky salt. Serve warm.
