Air Fryer Roasted Potato-and-Pepper Hash

Your air fryer makes short work of this tasty breakfast side dish.

To get a head start on brunch, chop your vegetables the night before. Cover the potatoes with cold water, and stick everything in the fridge. When it’s time to cook, drain the potatoes and blot dry on paper towels. Once that prep is done, the air fryer makes this hash hands-free, so you can enjoy your coffee.

Ingredients

  • 2 olive oil, plus more for ramekins
  • 1 lb. Yukon gold potatoes, cut into 3/4-inch pieces
  • 2 small bell peppers (1 red and 1 orange), cut into 3/4-inch pieces
  • 1 medium red onion, cut into 1/2-inch pieces
  • 4 cloves garlic, smashed
  • Kosher salt and freshly ground black pepper
  • 6 large eggs
  • Chopped fresh parsley, for sprinkling

Directions

    1. Step 1Preheat air fryer to 375°F. Lightly oil 6 8-ounce ramekins. 
    2. Step 2Toss together potatoes, peppers, onion, garlic, and oil in a bowl. Season with salt and pepper. Transfer mixture to prepared ramekins. Air fry in batches, stirring once, just until potatoes are tender and golden brown, 15 to 17 minutes. 
    3. Step 3Remove ramekins from air fryer. Make small wells in the vegetables and carefully crack an egg into each. Air fry to desired doneness, 3 to 6 minutes for a runny yolk. Sprinkle with parsley just before serving.
