Apple Cider Caramel Candies

These sweet cider-flavored treats are a surprising and delicious fall holiday treat to have on hand. They make a great host or hostess gift. You can keep them in a bowl on the counter for unexpected guests. Or just treat yourself to one as a mid-day reward!

Ingredients

  • 4 cups fresh apple cider
  • 1/2 cup heavy cream
  • 4 cups sugar
  • 3 Tbsp. unsalted butter
  • 1/2 cup light corn syrup
  • 1/4 tsp. pure vanilla extract
  • 1/4 tsp. kosher salt
  • Flaky sea salt

Directions

    1. Step 1Line an 8- by 8-inch baking pan with parchment paper, leaving a 2-inch overhang on two sides. Cook apple cider in a medium saucepan over medium-high heat until reduced to 1/2 cup, 40 to 45 minutes. Stir in heavy cream, sugar, butter, and corn syrup. Cook over medium-high heat, stirring occasionally, until temperature reaches 248°F on a candy thermometer, 10 to 15 minutes. Stir in vanilla and salt. Immediately pour into prepared pan. Sprinkle top with flaky sea salt. Cool to room temperature, at least 6 hours. 
    2. Step 2Use paper overhang to lift caramels from pan; discard paper. Cut into 64 (1-inch) pieces using a bench scraper. Wrap with wax paper candy wrappers, if desired. Store in refrigerator up to 1 week. Candy will soften at room temperature.

Tip: For an accurate temperature reading (which will ensure your caramel is the correct consistency), it is important to use a candy thermometer versus an instant-read stick thermometer.
