This Is How You Make a Biscuit, According to 'Yellowstone' Chef Gator

Biscuits play a big role on Yellowstone. Gabriel "Gator" Guilbeau said, "On one of our last days of Season 3, we shot a scene where I was in the kitchen making a hearty breakfast that included a giant tray of biscuits—and that’s how these biscuits received their name."

In another scene, while camping, Tate asks for three biscuits, and John tells him that he is just like his father, Kayce. “My wife used to make two Dutch ovens full of biscuits, one for your father, and one for the rest of us. He’d stand right by the fire and ask his mother ‘how long?’ When they were finally ready, he’d take a plate of biscuits, nothing else, and just go sit at the edge of the firelight with his back to us and he’d go at it with both hands.” 

“They were really good,” says Kayce. John asked his wife why she took so long to make them when Kayce would eat anything she put in front of him, and she replied, “Yes, but if I don’t make ’em, I can’t watch him eat ’em.” 

You’ll feel that same satisfaction when you watch these biscuits disappear.

Ingredients

  • 2 cups all-purpose flour, plus flour for dusting
  • 2 Tbsp. baking powder
  • 1/4 tsp. baking soda
  • 1 tsp. kosher salt
  • 1/2 cup very cold unsalted butter, diced, plus 1 tablespoon, melted
  • 1 cup buttermilk

Directions

    1. Step 1Preheat the oven to 450°F. 
    2. Step 2Sift the flour, baking powder, baking soda, and salt into the bowl of a food processor. Add 1/2 cup of the cold diced butter and pulse just until the butter is the size of peas. Pour in the buttermilk and pulse just until the dough starts to come together. 
    3. Step 3Dust a work surface with flour and turn the dough onto it. Press the dough together, pat it out into a disk about 1/2 inch thick, and then give it about 5 folds. Press it out again into a 1/2-inch-thick disk. Using a 3-inch round biscuit cutter or an empty tin can, cut out as many biscuits as you can. Press the scraps together gently and cut out as many more biscuits as you can. Arrange the biscuits on a baking sheet, spaced slightly apart. 
    4. Step 4Bake until golden brown, 10–13 minutes; do not over-bake. Brush the biscuits with the melted butter and enjoy!
