Tuna Cakes on Greens

This light dinner is an affordable take on a fancy seafood classic.

Go to any upscale seafood restaurant, and you'll likely see some sort of cakes on the menu: salmon cakes, crab cakes, or fish cakes of another kind. They're delicious and—honestly—pretty easy to make. 

And, if you use canned tuna, they're also quite affordable! We love serving a couple on a big bed of greens for a light dinner. It's a great way to turn a simple pantry dinner into something a little fancier.

Ingredients

  • 2 (12-ounce) cans chunk white tuna, well drained
  • 1 scallion, finely chopped
  • 1/3 cup saltine cracker crumbs, plus more if needed
  • 2 large eggs
  • 1/4 cup mayonnaise
  • 1 Tbsp. Old Bay Seasoning
  • 1/3 cup canola oil
  • 1/2 cup all-purpose flour
  • Green salad and lemon wedges, for serving
  • Chopped fresh flat-leaf parsley, for garnish

Directions

    1. Step 1Combine tuna, scallion, cracker crumbs, eggs, mayonnaise, and Old Bay in a bowl. (Mixture should be moist but not sopping. Add an extra crumbled cracker or two if it's too wet.) Divide into 8 patties. 
    2. Step 2Heat oil in a large skillet over medium heat. Place flour in a shallow bowl. Coat both sides of each patty in flour. Fry, in batches, turning once, until golden brown and warmed through, 4 to 6 minutes. Transfer to a wire rack to drain. 
    3. Step 3Serve atop green salad, garnished with parsley with lemon wedges alongside.
