These Golden Cheesy Bites Are the Ultimate Snack Upgrade

Move over, onion rings. There’s a new appetizer in town.

Homemade onion rings or fried pickles are fine and all, but maybe it’s time to expand your repertoire. These summer squash coins, coated in cheesy breadcrumbs are the perfect veggie vehicle for a creamy dill dipping sauce. Make up a batch the next time you’re feeling snacky!

Ingredients

  • 1/2 cup sour cream
  • 2 Tbsp. mayonnaise
  • 1/4 cup chopped fresh dill
  • 1 small garlic clove, grated
  • Kosher salt and freshly ground black pepper
  • 2 cups canola oil
  • 3/4 cup all-purpose flour
  • 3 large eggs, beaten
  • 1 1/2 oz. Parmesan, grated (about 1/3 cup)
  • 1 1/2 cups panko breadcrumbs
  • 2 medium yellow squash, sliced into 1/4-inch rounds

Directions

    1. Step 1 Combine sour cream, mayonnaise, dill, and garlic in a bowl. Season with salt and pepper. Fit a rimmed baking sheet with a cooling rack. 
    2. Step 2Heat oil in a large skillet over medium-high heat. Place flour in a shallow bowl; season with salt and pepper. Place eggs in a second shallow bowl; season with salt and pepper. Combine Parmesan and panko in a third shallow bowl. Dip squash in flour, then egg mixture (allowing excess to drip off), then in breadcrumb mixture, pressing to help adhere. Fry in batches, turning once, until brown and crispy, 2 to 3 minutes; transfer to prepared baking sheet. Serve immediately with dipping sauce alongside.
