Sometimes weekends can go off the rails, so having a few favorite pantry staples on hand gives you time to regroup and relieves some of the pressure of hosting. They make it easy to pull together something satisfying at a moment’s notice—no last-minute dash to the store required.

Bread &
Butter Pickles
This mason jar mainstay is good to have on hand for charcuterie boards and sandwiches.
Combine 11/3 cups apple cider vinegar, 3/4 cup sugar, 11/2 tablespoons kosher salt, and 2/3 cup water in a pot. Cook over medium heat until sugar is dissolved, 3 to 5 minutes. Stir in 1/4 teaspoon turmeric. Place 4 thinly sliced Kirby cucumbers, 1/2 cup thinly sliced yellow onion, 1 teaspoon mustard seeds, and 1/4 teaspoon celery seeds in 2 clean pint jars; top with liquid. Cool, then chill overnight or up to 3 days.
Makes 2 pints.

Blueberry-Thyme Jam
Bring it out for biscuits, spoon a little in a dish on a cheese tray, or give jars to guests as parting gifts.
Combine 2 pints blueberries, 11/2 cups sugar, and 1 tablespoon each fresh lemon juice and chopped fresh thyme in a medium pot. Bring to a boil, stirring. Reduce heat and simmer until temperature reads 220°F on an instant-read thermometer, 10 to 15 minutes. Cool, then transfer to a pint jar. Chill up to 1 week.
Makes 1 pint.
