The Best Loaded Nachos

These loaded nachos are great for tailgating and game night, but let's be honest, they would make a delicious meal any night of the week. 

One of our favorite things about this recipe is that you can really customize the dish exactly the way you like. Chorizo not your thing? Swap it out for grilled chicken! Or add some pulled pork or skirt steak. You could even make this dish meatless and skip it altogether. 

Other additions we like: guacamole, slow-cooker beef, a classic restaurant-style salsa, cilantro, chili powder, cotija cheese (available in most Mexican grocery stores), black olives, or quick-pickled onions — but what you decide on is entirely up to you!  

When it comes to chips, the thicker the better. Thin tortilla chips tend to break under all the delectable goods, especially after they've spent some time in the oven. Want to switch it up? Try piling your nacho toppings over kettle-style potato chips, or even using potato wedges!

Ingredients

  • 2 tsp. olive oil
  • 3/4 lb. fresh chorizo, casings removed
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 (15-ounce) can Black Beans, rinsed
  • 8 oz. tortilla chips
  • 10 oz. sharp Cheddar or pepper Jack cheese, grated (about 2.5 cups)
  • 1/2 small head iceberg lettuce, shredded
  • 3/4 cup fresh salsa
  • 1 avocado, chopped
  • Fresh cilantro, pickled jalapeño, and sour cream for topping

Directions

    1. Step 1Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper.
    2. Step 2 Heat oil in a large skillet over medium heat. Add chorizo, onion, and garlic and cook, breaking chorizo into pieces with a wooden spoon, until browned, 6 to 8 minutes. Stir in beans and cook until warm, 2 to 4 minutes.
    3. Step 3Spread chips on prepared pan. Spoon chorizo mixture over chips and sprinkle with cheese. Bake until the cheese is melted and chips are toasted, 10 to 12 minutes.
    4. Step 4 Serve topped with lettuce, salsa, avocado, cilantro, jalapeños, and sour cream.
